1Wash and dry all produce. Bring a stockpot of salted water to a boil. Trim and discard the bottom inch of the asparagus , then cut the stalks into 1-inch pieces. Slice the garlic . Pick the tarragon leaves and finely chop them.asparagus: 12, garlic: 4, tarragon -
2Once the water is boiling, add the gnocchi to the pot. Cook until tender and floating, ⏱️ 4 minutes . Remove with a slotted spoon and set aside in a medium bowl . Add the asparagus to the pot and cook until bright green, ⏱️ 1 minutes . Reserve ⏱️ ¼ cup of the cooking water, then strain .gnocchi: 18 -
3Heat 2 tbsp of butter in a large pan over medium-high heat until browned, ⏱️ 3 minutes . Remove the pan from the heat and mix in the garlic with the residual heat until fragrant, ⏱️ 30 seconds . Stir in the peas and toss to coat in butter.butter: 4 tbsp, peas: 8 oz -
4Add the gnocchi and asparagus to the pan and toss. Season with salt and pepper .salt, pepper -
5Return the pan to the stove over medium heat. Stir in sour cream , Parmesan cheese , half of the walnuts , and half the tarragon . Keep stirring until everything is heated through and a creamy sauce has formed, ⏱️ 1 minutes . 6Divide the gnocchi mixture between plates. Garnish with the rest of the walnuts and tarragon and enjoy! -
